Gatto Gateau was founded by me, Pâtissière Chocolatière Joanna Souster. I undertook my apprenticeship with Chef Hans Schweitzer, at Confiserie Schweitzer and Midsummer House in Cambridge, and went on to work with many other Michelin-starred and wonderfully talented and inspiring chefs in London, Germany and Switzerland. I now work independently, from my kitchen in Chesterton, creating bespoke cakes, centrepieces and chocolate work to order. My love is for using simple, quality ingredients, along with traditional European techniques, to produce desserts rich in flavour but light on the palate. Combining this with contemporary designs, I create pieces that are unique for any occasion. — JOANNA
